The Best Healthy Pancakes Recipe

On most mornings, my breakfasts are packed with protein as it provides me with longer-lasting energy and I feel full for longer periods of time.

I make this healthy pancakes recipe with chickpea flour, a well-known source of protein. You can use any flour you like but remember: different flours will yield different pancake textures and taste.

You can also prepare the batter beforehand, cover it, and leave it in the fridge overnight to make it in the morning. To save time in the morning, I typically use two pans so I can cut the cooking time in half.

Ingredients:

  • 1 ¼ cups chickpea flour
  • 1 scoop protein powder (I used unflavored but you can use any flavor you want)
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup plant milk of choice (I used oat milk but you can use any other plant-based milk)
  • ½ cup sparkling or still water (add as needed)
  • 2 eggs
  • 3-5 tsp. vegetable oil (I used avocado oil) for the batter
  • Cooking oil for the pan

Preparation:

In a large bowl, mix all the dry ingredients and stir well. In another bowl, mix all the wet ingredients (excluding the water) and whisk to combine. Add the wet mixture to the dry ingredients. Using a whisk or a hand mixer, mix everything until the batter is smooth and lump-free. If the batter is thick and dry, add a little water and keep mixing until smooth.

Leave the batter to rest for 5-10 minutes. Spray the pan with cooking oil or butter and turn the heat to medium-high. Let the pan heat well before pouring the first scoop of batter.

Cook the pancakes on each side until golden brown. Serve warm with your toppings of choice.
