As much as I love autumn, gloomy mornings heavy with raindrops make me feel uninspired. My pillow still holds my dreams from the night and I can’t bring myself to release them into the day.
On mornings like these, I grudgingly reach for my slippers, put on my robe, and imagine the smell of freshly baked cinnamon rolls. I play my favorite autumn songs and make a shot of strong, aromatic espresso. It’s bliss!
If I could have it my way, I’d have cinnamon rolls for breakfast every day. Most mornings, though, I delight in the crunch of crispy crackers sprinkled with sea salt, peanut butter, bananas, and organic maple syrup.
My favorite autumn breakfasts are sweet and simple, seasoned with cinnamon and nutmeg, and bursting with the taste of the harvest. In my attempt to eat more mindfully, I try to savor each bite and feel the different flavors in pure balance.
This is one of my favorite breakfast recipes to make in autumn and all year round. It’s earthy, nutritious, and easy to customize with your favorite toppings and spreads.
Wholewheat Crackers with Peanut Butter and Maple Drizzle
To prepare this simple and delicious breakfast, you’ll need:
- Wholewheat crackers (gluten-free options here) or wholewheat bread
- Peanut butter (or any other nut butter of choice)
- 1 tsp applesauce
- 1 banana, sliced (or any other fruit slices)
- Maple syrup, agave syrup, or honey (optional)
- Chia seeds
- Cinnamon, allspice, or pumpkin spice
- Crushed nuts and seeds of choice
- Unsweetened coconut flakes (for garnish)
- A glass of milk (I love oat milk barista style), coffee, or tea
Spread the nut butter on the crackers or bread slices. Add the banana or fruit slices on top and spread a layer of applesauce. Drizzle a bit of honey (or maple syrup) and add a pinch of cinnamon (or other spices of choice). Sprinkle some chia seeds, crushed nuts and seeds, and coconut flakes. Enjoy with a glass of milk or tea.
