One of my favorite quick and easy fall breakfasts is oatmeal with apple slices, pumpkin spice, and crushed nuts. Add a drizzle of honey or maple syrup and you get a combination that’ll give you sustained energy throughout the day. Plus, it’s packed with nutrients like fiber, protein, and antioxidants.
Here’s how to make it.
Ingredients:
– 1 cup cooked oatmeal (I used oat milk to cook mine but you can use any milk you like)
– 1 medium apple, cut into small chunks
– 1/4 cup pumpkin puree (optional)
– 1 tbsp. maple syrup, honey, or agave
– 1/4 tsp. pumpkin spice (or cinnamon)
– 1 tbsp chopped mixed nuts (I like walnuts, pecans, and almonds)
– 1 tbsp. seeds of choice (I like pumpkin seeds, chia seeds, and flax seeds)
Instructions:
1) In a small saucepan on medium heat, cook the oats until soft. Remove from heat and add maple syrup (or your preferred sweetener). Stir until combined.
2) In a medium bowl, combine the pumpkin puree and pumpkin spice. Mix well and pour into the cooked oatmeal. Stir to combine. Add the apple chunks, and sprinkle the nuts and seeds. Drizzle more maple syrup if you want more sweetness.
